    Jambon de printemps PASTRY COURSE

    Our pastry course unfolds the secrets of lamination. Throughout the 3 days you will come to understand how to create those perfect buttery layers in your pastry. We will use fresh fruits from the garden to pop those pastries with color & flavor, and herbs from the herb garden to season our savories.

    Arrival night we will share cheese & wine and discuss the course ahead.

    Day 1. CROISSANT

    On our first day we dive straight in with croissant. We will be making our dough, laminating the layers of butter, shaping our croissant. 

    Day 2. DANISH PASTRY

    Today we will create our selection of buttery danish. We will make our creme patisserie and different fillings for our pastries, also making wonderful pain au raisin. 

    Day 3. PUFF PASTRY

    On our last day we will make puff pastry, again laminating the butter. From our wonderful flaky pastry we will create Mille feuille.
