BREAD COURSE
We will spend our 3 days exploring many different breads,
styles, flavors & methods. All is hands on with me guiding you & teaching you why & how.
Day 1 An introduction into starters & mixing kneading proofing & baking
Day 2 Now we know how to make a dough today you will experience the classic French breads. We will make baguettes, brioche, & beignet.
Day 3 On our final day a journey to Italy to create classic breads, focaccia, ciabatta & pizza which we will bake in my wood fired oven.
Everyday lunch is included with wine.
Classes run approximately 6 hours.

PASTRY COURSE
Over the 3 days i will help you develop the skill of layering butter into pastry which gives you such light & airy products like Croissant & Mille feuille.
Day 1 We will make 3 doughs layering butter in each to give us Croissant, Danish pastry & puff pastry.
Day 2 Using the pastry we created the day before you will Shape & bake. Lear different designs of danish,
shape your croissant & construct a mille feuille.
Day 3 A savory day, we will make a use shortcrust pastry for pot pie. Hot water pastry for pork pie & rough puff for sausage rolls.
Classes run approximately 6 hours
